Dinner time

With the babies coming, I have been experimenting with recipes that are somewhat easy, quick to make and pretty simple so even Andy can cook. So thursdays experiment was Pasta Primavera, I started with this recipe from allrecipes.com http://allrecipes.com/Recipe/Pasta-Primavera-with-Italian-Turkey-Sausage/Detail.aspx?src=etaf and adjusted it to our tastes and what I had in the cabinet.

Pasta Primavera

1lb. of sausage, I used Paula Dean's hot pork sausage
2 small zucchinis, sliced and quartered
2 small yellow squash, sliced and quartered
1/2 onion, chopped
1/2 bell pepper chopped
minced garlic, approx. 2 cloves
olive oil
1 tsp. crushed red pepper
1 jar of Traditional Ragu or your favorite sauce
salt, pepper
1lb. of of the curly noodles (blanking on name)

Brown your sausage, drain, set aside. Boil your noodles until done, 8-10 minutes, drain and set aside. In a skillet, add your olive oil, enough oil to coat the bottom of the skillet, add to it your garlic, onion and bell pepper. Let it saute for a few minutes, add your squash and zuchinni, and saute for eh, 6-8 minutes, until the squash and zucchini are soft, you'll see it shrink down. Add to the veggies your red pepper, salt and pepper. In your pasta pot, dump the skillet contents, sausage, and pasta all together, and add 3/4 a jar of the Ragu, toss everything together. Add more or less sauce depending on your preference. Warning: it is spicy, so wimps and young-uns beware. Serve with garlic bread.

Substitute the sausage for ground beer and leave out the red pepper, layer in a baking dish with some cheese and you have baked ziti.

Andy was happy with the new meal.
